Its monolithic church was carved from a limestone cliff in the 11th century, and the great hall measures 38 metres by 20. The town takes its name from Émilion, a Breton monk who lived as a hermit and died in 767. Vines cover more than two thirds of the commune, mostly Merlot and Cabernet Franc, and macarons have been made here since 1620. With the roof folded back, warm gravel and vine leaves scent the air.

Sports cars thrive on this coastal run. The Dune of Pilat lies about 60 kilometres south-west of Bordeaux, at the southern entrance to the Arcachon basin. It stands 106.6 metres high, stretches 2.7 kilometres from north to south and is roughly 500 metres wide. The dune creeps inland year by year, slowly pushing the forest back. On the approach the pines thin out, the engine note echoes between the trunks and your hands tighten on the wheel as the sand wall appears.
